Bring on the big girl cup!

Welcome to two year old Tuesday!

Today my little Punkin makes her debut as the topic of my Tuesday posts. She consumes my life, so I figured I'd share the wealth with you guys!

My little, big girl!

We reached a MAJOR milestone this weekend. Ok, it may not be that big, and to those of you non-parents out there you're probably rolling your eyes at me. But believe me, its a BIG deal for us.

Up until yesterday cups (without lids) were merely for pouring, drizzling, and splashing. Punkin Head RARELY will attempt to drink out of one on her own. Oh no, to her they are the best. toy. ever. With a devilish grin on her face she can turn 2 tablespoons of water into the biggest mess you could possibly imagine. Do you know how hard it is to clean up wet red play-doh??? Ohhh I do. Its not fun.

Then came yesterday. We were at my in-laws 40th anniversary party, enjoying a beautiful day on the lake with family and friends. Punkin' was highly involved with eating popcorn out of a cup. Food has never been an issue in cups - she will walk around and not spill one crumb, she loves her food.

Just relaxing and taking it all in.

Then it happened. After watching a few of the big kids helping themselves to juice and water in their "big kid cups" she walked up to me and said "Momma, I have water in big girl cup". OK. No big deal, we're outside and its water. Nothing out here to ruin. Well, I gave her the cup and low and behold, she drank it! Not spilling a drop! Then went back for seconds, thirds, fourths....and NEVER ONCE attempted to play in it. She was THRILLED with herself. And I have to say I'm pretty thrilled too. Maybe now water play will stay in the tub, pool and water table. And less sippy cup valves to wash?? One can only hope.

Like I said, not a HUGE deal, but she sure did make this Momma happy :)

What to do with all that basil?

Have a crazy amount of basil this year? Make some freezer pesto!

You will need:

3 cups fresh basil, packed
2/3 cup fresh grated parmesan cheese
1/2 cup plus 2 tablespoons olive oil
3 to 4 large cloves of garlic
1/2 tsp. salt
1/4 tsp. fresh ground pepper
2/3 cup pine nuts (walnuts can be substituted)

Place all ingredients into a food processor and process until no lumps remain and the mixture is fairly smooth. Make sure to scrape down the sides as you go.

Pesto can be spooned into ice cube trays, covered and frozen for single serve portions, or place in a freezer-proof container (I LOVE the plastic Ball freezer jars) and freeze. 

This recipe is great for add-ins since it is basic. Sun dried tomatoes are a favorite. You can also mix in a little sea salt, spices of your choice, romano cheese and enough olive oil to "liquify" the pesto and it makes a great dipping oil!
