Mmmm....and it makes a great leftover meatloaf burger!
Ingredients:
1.5 pounds ground beef or turkey
1/2 cup BBQ sauce, plus 4 tbsp to top meatloaf
3 tbsp worcestershire sauce
1/2 cup ketchup
1 cup shredded cheddar (I use sharp cheddar)
1 Egg
1 cup seasoned whole wheat breadcrumbs
1 pound bacon
Salt and Pepper to taste
Pre-heat oven to 375.
In a large bowl whisk the egg. To the egg, add in all ingredients except bacon and the additional 4 tbsp of BBQ sauce.
Blend mixture together with your hands until well mixed.
On a non-stick cookie sheet mold the mixture into a loaf shape. I used a Reynolds Release lined cookie sheet for easy clean up.
Top the loaf with the 4 tbsp of BBQ sauce, spread evenly.
Wrap up the meatloaf with slices of bacon.
Bake about 1 hour.
When the meatloaf is cooked through crisp up the bacon under the broiler for a few minutes, watch closely.
I used the low setting on my broiler and kept the meatloaf about 10 inches from the broiler to prevent burning.
