Who doesn't love artichoke? These are delicious as an appetizer or over pasta.
I originally found this recipe HERE and modified it a bit.
Ingredients:
1 14oz can of quartered artichokes, drained well
1/4 cup milk
1 egg
1 1/2 cups of whole wheat bread crumbs, seasoned
1/4 cup fresh grated parmesan, added more flavor when fresh.
1/4 tsp salt
1/4 tsp pepper
3 cups olive oil for frying
Pour oil into skillet and begin to heat over med-high heat.
Mix grated parmesan and breadcrumbs, salt and pepper in a bowl
Whisk egg and milk in a bowl
Dip artichoke pieces into milk mixture, then into breadcrumbs, coating well.
Once oil is hot, carefully drop about 10 pieces of artichoke at a time into oil.
Fry for about 3 minutes.
Remove to paper towel lined plate to cool and dry.
NOTE: if using regular breadcrumbs, and not whole wheat, the finished product wont be as dark. I used whole wheat which darkened the color of the coating.
Place over pasta and sauce or serve with a dip as an appetizer. The hubs thought they were AWESOME!
