What 2 Years Means To Me.....

Well, its here. My baby girl turns two at 7:30pm tomorrow night....23 hours from right now. I never thought I would be so emotional about this, and now here I am reminiscing about all the amazing memories we have made with Maddy the past 2 years. Memories I never want to let go of.





4 years ago if someone had asked me when I was going to have a baby I would have told them "not any time soon!". I was content in my own little world, coming and going as I pleased. Dan and I were enjoying married life as if we were still dating - staying out to all hours of the night, picking up extra projects at work without having to "plan" them, pretty much doing what we wanted when we wanted. I was always the type that wanted to be independent, not have to be tied to a strict schedule, thinking I might just get through life without having a child.

When we finally decided to have a baby I was still having reservations, and honestly when I found out I was pregnant I was scared beyond scared! Its funny how fast things change when you see your child for the first time during an ultrasound. Instantaneously I was in love, deeply in love. Her little feet, her little hands, her little mouth blowing bubbles - she was a ball of love and perfection growing in my belly.

My world changed for the better because of my daughter. I am proud, honored and happy to say I'm a stay at home mom {working here and there of course, I couldnt give it all up!}. Being able to stay home with her is a privilege that I should thank my wonderful husband for more often. Not many people are able to stay home with their children, and I thank my lucky stars every day that I have been able to be with her almost every day for the past two years.

Every day she teaches me how to be a better Mom, how to be patient, respectful and open to learning new things. I truly think that children are the greatest teachers out there. Had I not become a Mom I would still be stuck living for myself, not reaching out to others as much as I do now, and not living life to its fullest. Maddy brings a special light to my life and has made me grow in ways I never thought possible.



So, here on her second birthday I just wanted to thank my Punkin' in writing. And share with you a little of what I am putting in her "Baby Book" on this, her 2nd birthday.

Happy Birthday Maddy Ry,

Today you are TWO! And I cant believe it! Seems like just a couple of weeks ago you were a newborn, all snuggled up on my chest like a little tree frog. Laying there all comfy and content, not realizing that the day you were born you changed my life forever, for the better. I fell for you the moment I laid eyes on you, so perfect in all your baby new-ness with your soft tuft of red hair, blue eyes and perfect little cry. Dada and I will never be able to put the feeling we had into words that do it justice, but that day you melted our hearts and made the bond between all of us so much stronger, and you did it all in an instant. And every day since then you have somehow managed to strengthen that bond even more. You are one truly magical little girl. Being a parent has been the single most rewarding thing I (and I'm sure Dada will agree) have ever done. Having the ability to watch and help you to grow and mature fills my heart with joy.  Never in a million years did I think time would go by this fast. Literally in the blink of an eye you have grown into a beautiful, energetic, sweet, lovable, independent and happy 2 year old. The baby in you is slowing fading away, which brings tears to my eyes {I'm trying to type through tears so bear with me}, but no matter what you'll always be mine and Dada's Little Buddha Looda Punkin' Head. We love you to the moon and back, and then some more....

I wanted to share what the past two years with you has been like:



In the Past Two Years You...

Grew from 8lbs. 2oz to 30lbs.
Stretched from 21.5 inches to 38.5 inches.
Went from communicating with squeaks and cries to speaking 5 word sentences.

Have shown me what an infectious smile really looks like.
Taught me how important it is to be patient, and to not sweat the small stuff.

Learned your ABC's and 123's (all the way to 15, forwards and backwards!)
Went from 10 strands of curly red hair to a full head of gorgeous strawberry blonde curls that   stretch to your shoulder blades.
Have become your own little person, inside and out. Your personality blossoms more each day.

Lost your big chubby baby cheeks, legs, and wrists, all the things that defined you as a baby.
Have become so social and outgoing, every person you meet you greet with a smile and a big "Hi!'
Have given us 7,000+ dirty diapers to change!
Taught me what it is to love unconditionally.

Proved to me that there is someone out there more picky than me when it comes to food.
Given me the ability to love you more and more each day.
Manage to keep us laughing all day long with your crazy giggles and funny sayings.
Taught me how to make up silly songs about food to get you to eat.
Reminded me that the tickle monster does exist.
Have given me someone to snuggle with and give my goodnight kisses to every night.

Have shown me how to enjoy the little things in life that I thought I outgrew, like catching snowflakes on my tongue and picking dandelions.
Have shown me that giggling uncontrollably cures almost anything.
Proved to me that things I used to think were impossible ARE possible with a little perseverance.

And most of all...you have given me 730 INCREDIBLY AMAZING days to be your Mom, something I cherish with all my heart and can't wait to add to. 


This is just a tid-bit of the Baby Book mushy-ness. I saved the real fluffy detailed stuff for the eyes of my family only. For those of you out there with kids I'm sure you know what I'm talking about with all that I mentioned above. I feel like I have been blessed with the best gift one could ever receive. And as much as I am going to miss the "baby" days, I cant wait to watch her grow up, and to explore her world with her.

Ok, back to decorating the house for tomorrows party...now that I've written a novel and made myself cry!

Homemade Dishwasher Detergent

My most recent DIY cleaner? Dishwasher detergent.


I tested 2 different kinds yesterday {yes...I had THAT many dishes}. One concoction I didn't like at all, actually had to re-wash the majority of the dishes by hand. And the other, well, so far it gets my seal of approval!

Normally I use Cascade Complete ActionPacs and am starting to run low on them. I decided to try out the homemade version before running out just in case I needed to re-run the load of dishes with the Cascade if it didn't work out. But, I didnt have to. My DIY detergent left the dishes feeling squeaky clean, without water spots and shiny! Another plus? It's the easiest thing to make. So far, so good.  I haven't actually done the math yet, but, I'm guesstimating it will cost me less than $0.10 a load for the detergent.

Ingredients:
1/2 cup Borax
1/2 cup Super Washing Powder
1/4 cup kosher or pickling salt (I used pickling)
4- 10 packets unsweetened lemonade powder (For the citric acid. I used 8 single serve packets)
Shake all ingredients together in an air-tight container.
Use 1 tablespoon per load
What about a rinse aid, you ask? Plain old white vinegar! As to how much I'm not sure yet - I didn't use it this time around since I wanted to test the detergent alone, but, next time will give it a go and see what happens!

Homemade Basil Marinara

The best things in life (besides my beautiful little girl, and huggable, lovable husband) are....well, FOOD! And good food at that.

My all time favorite (at the moment) is definitely an amazing pasta sauce paired with a simple fresh loaf of Italian bread slathered in butter. Just thinking about dipping the bread into the yummy goodness of the sauce makes me smile. Thats exactly what I had for lunch yesterday after making the sauce. SOOO GOOD!



This is a recipe that I play with time and time again, altering little things here and there depending on what types of herbs I have on hand or what I plan on pairing with the sauce. It is also a great base to add into soups, casseroles, etc. Adding veggies to it works out well too! During the summer fresh peeled tomatoes are used, the rest of the year I usually opt for easy canned tomatoes. Basil is never replaced though, it has a permanent spot in this recipe.

So here goes....this is how I made it yesterday:

Ingredients:
5 cans of crushed tomatoes
1 can tomato paste
2 tblsp. EVOO
1 to 2 tblsp. minced garlic (use lesser amount if you aren't a garlic lover)
3 cubes (1 teaspoon each) frozen minced basil, or 3 teaspoons dried basil (or another herb - oregano, etc.)
3 tblsp. packed brown sugar
2 - 4 tablespoons balsamic vinegar (start off with a little, you can always add more if you like the flavor)
2 tsp. salt
1.5 tsp. fresh ground black pepper (more if desired)
2 tblsp minced onion
2 tblsp. white sugar
1/4 cup fresh chopped parsley
1 cup fresh chopped basil
1/2 cup Parmesan cheese (Optional as an add-in)

**In a large pot heat the EVOO on medium heat. Add minced garlic and stir until garlic becomes fragrant and softens. If desired you can also use 1/2 a fresh onion, chopped and cooked with garlic, this is in place of minced onion.
**Add crushed tomatoes and tomato paste, stir occasionally until heated but not boiling. Add in the remainder of the ingredients with the exception of the chopped parsley, chopped basil, Parmesan and 1 tblsp. of white sugar.
**Bring to a simmer for 60 - 75 minutes, uncovered. The longer it simmers the thicker it becomes. I happen to like a thicker marinara and will simmer at least 75 minutes, sometimes more.
**Turn heat down to warm or  low and add the remainder of ingredients. Cook another 15 to 20 minutes stirring occasionally.
**This sauce is great to toss in the freezer too. Let cool before pouring into freezer bags or plastic containers.

A little tip for spring cleaning...

It has begun!

Very S L O W L Y I've been knocking things off my spring cleaning list, one by one. It feels good to start giving the house a deep clean, I just wish I had 2 to 3 solid days to really dive into it.

I'm hoping the book 31 Days to Clean by Sarah Mae will help me go those few extra steps and get the ENTIRE house clean without taking all summer to do it! Plus she is giving the book away, just through tonight though - so go check out her blog!

In the meantime I wanted to share the most relaxing thing on my cleaning list: my lavender scented mattress.
Instead of just changing your sheets and washing your mattress cover go that extra step...
Mix 1 box of baking soda with 5 - 10 drops of lavender oil (or any scent you enjoy), shake up well in a covered container. After vacuuming your box spring, and all the cracks and crevices of your bed sprinkle the powder on your mattress. Let it sit a couple of hours and vacuum up! The baking soda is a natural cleaner, and odor absorber and the lavender oil will lightly scent your mattress. And I'm pretty sure you'll sleep 10 times better because of it - it's that heavenly!

All-Purpose Peppermint Cleaner

Ahhh....the smell of peppermint! Awakening and rejuvenating. So, why not make an all-purpose cleaner with it? It just may wake you up enough to make you want to clean your entire house (ya, I know, I'm dreaming)!

The label on my homemade cleaner needs a re-vamp, but, you get the picture!


Today I tried a couple of versions of this recipe. The recipe below is the one I liked best after tweaking the amounts of each ingredient to my liking. I decided to decrease the amount of castile and borax most recipes call for, which is personal preference. I love the way that vinegar cleans and wanted that to be my main "cleaner". Feel free to play with the amounts and come up with your perfect cleaner!

Here is how I made it.

What you'll need:

16oz CLEAN spray bottle
1/4 cup white vinegar
1 tsp. borax
1 tsp. Dr. Bronners Liquid Peppermint Castile Soap (or any other scent you may want to try)
Hot Water

What you need to do:

~Add borax and vinegar to the bottle, fill remainder of the bottle with hot tap water. Shake well until the borax has dissolved.
~Add the castile soap and lightly shake again - there will be a little sudsing at the top of the bottle.
NOTE: Be sure to dissolve borax well before adding the castile or it will foam in the bottle when shaken.

This can be used on virtually everything EXCEPT windows/mirrors - it will streak. I'm working on a great glass cleaner and will post when I have the recipe perfected!

Happy Easter!

We are just settling in at home after a hectic day. Three houses and three meals in 8 hours, with an almost two year old that had to do without a nap. HECTIC! Yet, it was SO. MUCH. FUN.

We packed up the car and off we went! Desserts, breakfast casseroles, colored eggs and jars of homemade strawberry syrup (Easter gifts to our parents/grandparents) made the trek with us to each house.

We started the day off at my in-laws house for brunch which was delicious as usual. Honestly, I would have been okay not eating anything else the rest of the day, I was STUFFED. The table was filled with everything from casseroles to ham, fruit to potatoes, and of course homemade donut holes! The donut holes are a tradition with my mother in-law and FABULOUS. Punkin and her cousins found out that the crafty Easter Bunny had also left baskets for them there as well! Of course, they dug right into the candy. "They" as in Punkin's cousins, Punkin herself went for purple grapes instead. Yup, thats right - GRAPES! Really Dooda??? All that delicious chocolate and you grab for the grapes? Thats okay, more for Mommy to eat.


From the in-laws house we went to my Mom's for dinner, where again we totally stuffed ourselves. Ham, homemade mac 'n cheese, scalloped potatoes, green beans, carrots, and my Nana's amazing corn fritters (to die for!). Dessert was something no one was able to handle - seconds and thirds of dinner stuffed everyone to the max. Punkin and K (my sisters daughter) got busy with an egg hunt outside - great to see the girls running around barefoot in their Easter dresses hunting for those eggs, adorable. Ultimately the hunt led them to yet ANOTHER basket the Easter Bunny had left for each of them. That silly bunny sure was busy this year! Punkin did indulge in a lollipop this time, but, left the rest for Mommy, such a good babe :)


For dessert we drove over to Memere and Pepere's house. For the second time today I had to balance my massive layer cake on my lap in the car - very stressful situation - that was one BIG cake! And I'm happy to inform you it made it there un-harmed. We brought the strawberry parfait layer cake, a cream cheese and strawberry pie and a gallon of laundry detergent - cant believe how many people have asked to try it! Dessert was delicious. Memere made a homemade strawberry rhubarb pie - seems strawberries were the theme this year.

We had JUST started dessert when Memere walked away and came back with two BABY BUNNIES! Happy Easter Punkin!! One was for her, the other for K. I *think* both will be living at our house once the bunny hutches are completed. Anyone want to come and visit 'Dufour's Petting Zoo'? They are just about 6 weeks old and incredibly cute. Dooda instantly fell in love and is going to have a blast watching them grow up and caring for them, and secretly the hubs and I will enjoy it too.  Once the bunny ordeal was over another Easter egg hunt took place - Punkin is getting really good at searching for eggs now, and is so into it.


From Mem and Peps home we came. So nice to get into jammies and relax before the inevitable food coma really takes hold. Hopefully you all had a wonderful, family filled day too! Off to sleep away the calories I took in today (thats as effective as the gym, right??).

Fried Artichoke Nibbles

Who doesn't love artichoke? These are delicious as an appetizer or over pasta.
I originally found this recipe HERE and modified it a bit.


Ingredients:
1 14oz can of quartered artichokes, drained well
1/4 cup milk
1 egg
1 1/2 cups of whole wheat bread crumbs, seasoned
1/4 cup fresh grated parmesan, added more flavor when fresh.
1/4 tsp salt
1/4 tsp pepper
3 cups olive oil for frying




Pour oil into skillet and begin to heat over med-high heat.
Mix grated parmesan and breadcrumbs, salt and pepper in a bowl
Whisk egg and milk in a bowl
Dip artichoke pieces into milk mixture, then into breadcrumbs, coating well.
Once oil is hot, carefully drop about 10 pieces of artichoke at a time into oil.
Fry for about 3 minutes.
Remove to paper towel lined plate to cool and dry.

NOTE: if using regular breadcrumbs, and not whole wheat, the finished product wont be as dark. I used whole wheat which darkened the color of the coating.

Place over pasta and sauce or serve with a dip as an appetizer. The hubs thought they were AWESOME!

BBQ Bacon Meatloaf

Mmmm....and it makes a great leftover meatloaf burger!


Ingredients:
1.5 pounds ground beef or turkey
1/2 cup BBQ sauce, plus 4 tbsp to top meatloaf
3 tbsp worcestershire sauce
1/2 cup ketchup
1 cup shredded cheddar (I use sharp cheddar)
1 Egg
1 cup seasoned whole wheat breadcrumbs
1 pound bacon
Salt and Pepper to taste



Pre-heat oven to 375.
In a large bowl whisk the egg. To the egg, add in all ingredients except bacon and the additional 4 tbsp of BBQ sauce. 
Blend mixture together with your hands until well mixed.
On a non-stick cookie sheet mold the mixture into a loaf shape. I used a Reynolds Release lined cookie sheet for easy clean up.
Top the loaf with the 4 tbsp of BBQ sauce, spread evenly.
Wrap up the meatloaf with slices of bacon.
Bake about 1 hour.
When the meatloaf is cooked through crisp up the bacon under the broiler for a few minutes, watch closely. 
I used the low setting on my broiler and kept the meatloaf about 10 inches from the broiler to prevent burning.

Crispy Polenta with Pesto and Tomatoes

Great as a quick dinner or an easy appetizer.


Ingredients:
1 package of  pre-made polenta, or homemade polenta
1/2 cup fresh grated parmesan cheese (parmesan/romano is also good)
1 tablespoon chopped parsley, or thyme
1/2 cup pesto
1/2 cup of chopped cherry tomatoes
Vegetable oil
Olive oil




Mix parmesan and parsley or thyme together in a bowl.
Slice polenta into 1/2 inch thick rounds, pat dry and press into the parmesan mixture.
In a skillet heat a 4 tablespoons of vegetable oil over high heat.
Fry each polenta round (a few at a time) until golden and crispy, about 4 minutes on each side.
Place polenta rounds on a paper towel to drain.
Move to a plate and add a teaspoon or more of pesto to each round, topped with chopped tomatoes and a drizzle of olive oil and a pinch of parmesan.

Rain is such an inspiration!

As much as I usually don't like when it rains all day, today I'm perfectly fine with the idea.

Over the weekend I limed and fertilized our lawn (what we hope to eventually be a lawn) and have been patiently waiting for the rain to water it in. Well, today I got my wish. 'April showers bring May flowers' - right? Too bad I only have one flower garden planted!

The rain is most welcomed for other reasons today too. It's giving me a chance to sit down and figure out my vegetable garden situation for this year, what to plant, how many garden boxes I'm going to need the Hubs to make (hint, hint honey - get on that!), and some time to wander around the house coming up with decorating ideas.

We have been back and forth on color ideas for the kitchen since we started the project. Darker or lighter, barely there colors or bright? I just cant make up my mind. I keep going back to the light and airy seaside and rainy day colors though. The kitchen only gets morning sun which makes it a little more dreary in the afternoon so we wanted to brighten it up a bit. We chose to do the cabinets in a shade of white, and the back splash is on its way to being subway tiled - white as well. The counter is tones of deep browns and a hint of black which grounds all the white. But, for the walls???? I'm so indecisive.

Then this morning, with the rain and grey clouds I noticed how beautiful my basil plant looked. There's just something about the way a nice green plant pops out against all the white, and our cherry and black dining room table looks great with the contrast of those subtle colors. Those are my two inspirations. My little basil plant sitting on the windowsill with the rainy grey and white sky as its backdrop is gorgeous to me. If I could bottle those colors my entire house would wear them! So, I guess I know where I'm leaning color-wise - light and airy. Funny how writing it down makes decisions a little easier to make. Maybe its time to bite the bullet and choose a color. Easier said than done - now do I go with greys, blues, taupes or greens? Can someone do this part for me? I dwell too much on it - and each day the decision gets harder.

Thats it - I think I'm going to set a goal for next week to get the kitchen painted.  After all it is April Vacation next week. And I plan on keeping my wonderful Hubby as busy as I can!  I think many trips to Gourmet Donuts for Snickers ice coffee will be in order - gotta keep him happy somehow!

Ok, my goal has been set, now lets see if we can get it done.

And it begins....The Blog Wars.

I have a feeling this could start a war, in a good kidding around, spousal rivalry kind of way.

Let me fill you in....

This afternoon I had QUITE a good laugh when I went to sign into my blog account. I noticed something a little out of the ordinary with the Blogger site...someone elses blog was up on the screen. It didn't click at first, then I saw my picture. So I started to read - "Livin' with Gingers" and quickly realized the hubs had started his own blog!!!! Pretty sure I was laughing so hard I almost peed my pants. This coming from a guy that rolled his eyes and couldn't figure out for the life of him why I started one a couple of months ago. I know its just his way of poking fun at me for having a blog, yet now HE has one! So isnt't the joke on him??? Secretly I know he likes the idea of having an outlet and sharing things, will he ever admit it - NO WAY!

In between the laughs I remembered why I married him - he has a way of melting your heart while making you laugh. Love and laughter all at the same time, nothing could be better. I know, I'm getting all mushy...sorry! He's a one in a million though - you'll get what I mean when you read his post :)

IF he keeps this up the blog world could get a lot more entertaining. Especially since you will get to hear both sides of the story when we poke fun at each other - which is something that is sure to happen!

Wash, dry, fold....repeat

I just made my own laundry detergent!
10 gallons of it - phew!  And you know what? It was pretty darn easy!


Yesterday afternoon while I was out running errands I picked up the ingredients. I was able to find them all at Hannaford, that store never lets me down. I did however need to run over to WalMart to get a 5 gallon bucket to mix it up in. All totaled I spent a whopping $10.38 (not including tax). About the amount I would have spent on ONE 50 oz. bottle of Tide.

The best part about this recipe? The next 10 gallon batch I make will only cost me $0.97 since I will only have to purchase the Fells Naptha or Kirks bar. A little more if I decide to scent it with an essential oil.

If you are going to try this here is what you will need and what I spent for it....


1 Fells Naptha or Kirks Castile (for hard water) soap bar ($0.97)

Borax ($2.99)

Arm & Hammer Super Washing Soda ($2.98)

Essential Oils for scent (I skipped it this time around to see what the soap would smell like).
       For example: Tea Tree, Rosemary, Orange, Lavender

5 gallon bucket with a cover ($2.44 for the bucket and $1 for the lid)


And now for the recipe:

It took us about 35 minutes to make - well, if you cut out all the goofing around it really took about 20!

Grate the Fells Naptha (or Kirks Castile) bar.


Add the grated soap to a sauce pan with 4 cups of water, heat over medium to medium-low heat, constantly stirring until all the soap has melted. There should be no pieces of soap left (even little ones!). This takes about 10 minutes and is the lengthiest part of the process.


Fill the 5 gallon bucket half way with hot water and then add the melted soap mixture.


Mix in 1 cup of Arm & Hammer Super Washing Soda and 1/2 cup of Borax. You can also add in 10 to 15 drops of essential oils at this point if you want to scent your detergent.


Stir well. If you have a drill with a paint stirrer attachment it works very well! We also used a long handled wooden spoon to make sure everything had dissolved.



Fill the rest of the bucket with hot water and stir again, making sure everything is well mixed.

Cover and let sit at least 12 hours to thicken. When you take off the cover it will look like this:


After it sits it will have thickened up nicely. Stir again as there will be some pockets of liquid within the gel that need to be mixed in.

Fill a small bottle half full of detergent, fill the other half with warm water and shake well.. I used a couple of empty detergent bottles I had saved.

Congratulations! You now have your very own homemade detergent!


If you are like me and normally use Tide you just saved yourself about $150/year by making this one batch. Money that can be put to MUCH better use elsewhere!


To use:


5/8 cup in a top load washing machine, 1/2 cup in a front loader. Adjust the amount if needed.

I did try it out on two loads of laundry today, my initial review is pretty good. I was impressed that none of the "soapy" scent of the Fells Naptha bar was left on the laundry. I did still use Downey as a fabric softener and was worried the two scents would collide and not be a great mix.

I washed a pile of kitchen towels the Hubs had used to clean up homemade beer he was brewing last night - they were pretty dingy since he is making a dark beer, and very stinky (homemade beer DOES NOT smell the best in its beginning stages!). I think a little bit of dinner may have been wiped up with it as well.

Here is a plug for my Darling Husbands newest beer creation. It still needs another month to set up and then have carbonation added, so don't go drooling over his concoction yet. He needs a lot of this to survive life with me :)


Back to laundry...
The detergent did a great job at removing the majority of the stains on the towel, I didn't use bleach or a stain spray as I normally would. I wanted to "test" the detergent. There is no smell to the towel at all (beer, or soap), actually it smells rather fresh and clean! The towel was not fresh and white to begin with (even before the beer incident), it did have a few stains from previous use, so all in all I think it did a decent job. Next time I will definitely use the stain spray though.

So there you have it! My wash, dry, fold, and repeat review!

UPDATE! I have since made 2 more batches of this detergent and scented it with lavender essential oil. The result was outstanding. I used about 15 drops for the entire 10 gallons. Your clothes will not be overly scented. They come out of the dry with a very light and refreshing scent. I will definitely do this again!

Busy day! The sun was finally out which motivated me to finish up a couple of projects and get the rest of my errands run for the week. While Punkin and I were out and about today I came across some Jumbo Bunny Mallows and immediately found myself thinking how delicious they would be dipped in chocolate. Oddly enough the marshmallows AND some chocolate found their way into my shopping cart.


When we got home we made some cute little Bunny Mallow lollipops. 


Here is how we did it....
Pour sprinkles into a bowl for dipping.


Push lollipop sticks into each marshmallow.


Dip each "lollipop" into chocolate (I used Wilton's Candy Melts), then roll in sprinkles.

Allow to set up on wax paper for 15 minutes and ENJOY!


I only did the ears since I didn't have much time to devote to this project. Still pretty cute, and yummy if I do say so myself!!
